Root Beer BBQ Chicken Sliders With Twisted Mac & Cheese

Servings: 4
Total Time: 35 minutes

Ingredients

For the Sliders:

  • 1 Pack Boneless Skinless Chicken Breast

  • 1 Can of A&W Root Beer

  • Kraft BBQ Sauce - Chicken and Rib

  • Salt and pepper, to taste

  • 6 Villaggio hamburger buns

For the Twisted Mac & Cheese:

  • 1 box Kraft Deluxe Velveeta Shells & Cheese

  • 1 medium head of cauliflower

  • Salt and pepper, to taste

Instructions

Prepare the Root Beer BBQ Chicken:

  1. Sear the Chicken
Slice or pound chicken breasts for even thickness. Season with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add chicken and sear on both sides until lightly browned, about 2–3 minutes per side.

  2. Simmer with Root Beer and BBQ Sauce
Pour in 1 csm of root beer and some bbq sauce. Stir to combine. Reduce heat to medium-low, cover, and simmer for 12–15 minutes, or until chicken is fully cooked through and tender.

  3. Shred and Reduce Sauce
Remove lid and use two forks to shred the chicken directly in the skillet. Let simmer uncovered for 5 additional minutes, stirring occasionally, until sauce thickens and coats the chicken.

  4. Assemble the Sliders
Lightly toast buns if desired. Spoon a generous amount of the shredded chicken mixture onto each bun. Serve immediately.

Prepare the Twisted Mac & Cheese:

  1. Cook the Cauliflower
Cut cauliflower into florets. Bring a large pot of salted water to a boil. Add cauliflower and cook for 8–10 minutes, until very tender. Set Aside.

  2. Prepare the Pasta
In a separate pot, cook the pasta from the Velveeta Shells & Cheese box according to the package directions. Drain and return pasta to the pot.

  3. Purée the Cauliflower
Using a blender, food processor, or immersion blender, blend the cooked cauliflower until smooth. Save some of your water to get a creamier consistency.

  4. Combine and Serve
Add 1/4 cup cauliflower purée and the cheese sauce packet to the cooked pasta. Stir until well combined and heated through. (You can add more cauliflower if you desire) Season with salt and pepper to taste.

Serve the sliders alongside a scoop of twisted mac & cheese. Enjoy warm.
